If you want to replay all the parts of Call of Duty in a row, take up Black Ops immediately after Modern Warfare 2 to consistently see the progress of the series in terms of graphics and gameplay. And be sure to check out the zombie mode - it has a lot of blood, sharp teeth and deadly weapons!
